For example, while my hosting is obviously done completely from the UK due to my self-host setup, DynDNS handle my DNS. If someone wanted to DMCA take-down me, they could go to DynDNS and force them to down me because they're US-based.

I don't know whether that would work actually, but my point is, if just one little bit of your infrastructure is US-based, you are affected by it.
